Live animals usually are market-ready in the 100 to 125-pound range. From this you can expect a yield of 35 to 55 pounds of packaged meat ready to cook.
You specify how the animal is cut. For instance - thickness of chops, number of chops in a package, pounds of ground meat per package, etc. Usually you get 2 legs, 2 shoulders (bone in or not), loin, chops or rack, ribs (chops or crown roast), stew meat and ground meat, liver, kidneys and all neck bones. If you wish we can arrange for the head to be dressed as well. |
